Healthy Eating for Family & Community

By Mariette Sluyter, Whittaker Farm

This time of year we talk a lot about “healthy eating.” This concept is a bit overused, and it’s thrown around to sell so many products. Sometimes it can be a challenge to wade through the muck to what is truly healthy. We would like to offer a way to think through this challenge and consider what is “healthy” and in what context.

It’s hard to believe we are on our last week of the summer CSA! A big thanks to all of you, from all of us for supporting local farms. It’s been a delight to see you as you pick up your shares. We appreciate your kind feedback, willingness to take on the risks of farming with us, and being a huge part of our success! THANK YOU!!!

This week have a very leafy share coming your way. As temperatures cool down, the greens spring up. We also have some crisp root veggies in the shares this week, delicious winter squash and the last of the tomatoes. Thank goodness for “second spring,” one of the best features of living on the west coast 🙂

I am very excited this week that you will be receiving celeriac, or celery root. My favourite vegetable! See below for some great celeriac recipes.

What’s in the share this week?

  • Bok choi
  • Kale
  • Beets
  • Celeriac
  • Parsley
  • Mizuna
  • Tomatoes
  • Winter squash
  • Potatoes

What the heck is that funny looking root veggie with the bizarre twisty tendrils sticking out all around? It’s celeriac! An unlikely looking delicacy. The sweet, delicate, fragrant & crisp roots are absolutely delightful grated raw, simmered in soups or sliced and roasted with other veggies. Here’s my favourite way to eat celeriac:

Root vegetable pancakes:

  • 1/2 a medium sized celeriac root, grated
  • 1 carrot, grated
  • 1 medium/large potato, grated
  • 1 small onion, finely sliced
  • 1 large egg
  • salt, pepper and rosemary to taste

Grate all the root veggies separately. Place the grated potatoes in a towel, cheesecloth or jelly bag and squeeze the liquid out. Combine with other veggies. Add the egg, salt, pepper and rosemary and mix.

Heat a cast iron skillet or frying pan to medium high heat. Grease the skillet with your favourite oil and place dollops of the mixture on the pan once heated. Press firmly to get a flat pancake. Flip when the underside is golden brown.

Serve hot with ketchup or chipotle or garlic mayo.

Mizuna is a delicious, mild mustard green from Japan that you will love! From it’s crunchy stems to it’s tender leaves, mizuna is a fall treat. Arzeena at Amara Farm says: “We chop the leaves into thirds and toss with lemon poppyseed dressing, pears, & nuts. Yummy!”

We need the BLUE TOTES!

If you are a CSA member who picks up your share in bins, please remember we need those blue totes back. Here’s what to do:

Bring bags and pick up your share and leave last week’s and this week’s bin at your pick up location. OR

Return your bin to your usual pick up location by Friday, October 2 at noon (12:00PM) so I can pick them up.

Campbell River members, we will be in touch by email to let you know about bin pick up!

If you forget, or something goes wrong, please return bins to Amara Farm at 2641 Kirby Road, Courtenay. You can leave them at the wash station right near the gate.

Thanks for helping us get all our totes back so we can have another awesome CSA year!
